Even though people use to make carrot cake at the time of Easter, but this dessert can be made any time you want. Here I am sharing two types of carrot cake recipe which you can make with ease.

Carrot Cake With Cream Cheese Frosting

Preparation time – 2 hours

Cooking time – 35 minutes

Ingredients

  • Flour – 250 gm
  • Vegetable oil – 180 ml
  • Baking powder – 2 Tsp
  • Salt – ½ tsp
  • Baking soda – 1 tsp
  • Nutmeg powder – ¼ tsp
  • Ginger powder – ½ tsp
  • Vanilla extract – 1 tsp
  • Cinnamon powder – 1 ½  tsp
  • Grated carrot – 300 gm
  • Brown sugar – 300 gm
  • Egg – 4
  • Granulated sugar – 100 gm
  • Applesauce – 125 gm, unsweetened

For The Frosting

  • Powdered sugar – 240 gm
  • Vanilla extract – 1 tsp
  • Unsalted butter – 115 gm
  • Brick style cream cheese – 8 ounces

Directions

For The Cake

  • Preheat the oven at 350 degrees Fahrenheit.
  • Take two 9-inches cake pan, round in shape and spray it using a non-stick cooking spray. Keep them aside.
  • Mix the flour, ginger, nutmeg, baking powder and baking soda, salt, and cinnamon in a bowl. Keep it to use later.
  • Take another big bowl. Add the apple sauce, eggs, vanilla extract, brown sugar, oil, and granulated sugar. Mix them very well. Add the grated carrots in it and give them a good mix.
  • Now add the flour mixture into this carrot mixture and mix them using a rubber spatula. However, do not overdo it.
  • Net, pour the cake batter into those 2 cake pans and bake them at 350 degrees Fahrenheit for about 35 minutes. Once done, let them cool.

For The Frosting

Take the cream cheese in a bowl and beat it with a hand mixer till it becomes smooth. Add the powdered sugar along with butter and vanilla extract and mix again. The frosting is ready.

For Assembling The Cake

Take a cake leveler and level the top of both the cakes. Now, on the top of one cake, spread the frosting as needed. Place another cake on it and cover the whole with the remaining frosting.

Carrot Cake Recipe With Pineapple And Walnuts

Preparation time – 30 minutes

Cooking time – 45 minutes

Ingredients

  • Flour – 2 cups
  • Shredded carrots – 2 cups
  • Crushed pineapple – 8 ounces
  • Vegetable oil – 1 cup
  • Eggs – 3
  • Baking powder – 2 Tsp
  • Salt – 1 Tsp
  • Confectioner’s sugar – 2 cups
  • Butter – ¼ cup
  • Baking soda – 1 tsp
  • Vanilla extract – 1 tsp
  • Cinnamon powder – 2 Tsp
  • White sugar – 1 ¾  cup
  • Flaked coconut – 1 cup
  • Chopped walnut – 1 cup
  • Cream cheese – 8 ounce

Directions

  • Take a bowl and mix flour, baking soda and baking powder, cinnamon and salt.
  • Add, oil, eggs, vanilla and sugar. Mix well.
  • Mix the carrots, pineapple, walnuts, and coconuts.
  • Preheat the oven at 350 degrees Fahrenheit.
  • Grease a cake pan of 9*13 inches and dust some flour.
  • Tip in the cake batter into the pan and insert it in the oven.
  • Bake it for about 40 minutes.
  • Mix the cream cheese with confectioner’s sugar in a bowl and spread this frosting on the top of the cake when it is cooled.
