Easy Chocolate Cake
Prep Time: 30mins
Cooking time: 30 mins to 1hr

Ingredients
For Cake
- 225gms plain flour
- 85gms cocoa powder
- 350gms caster sugar
- 1 ½ tsp baking powder
- 2 tsp vanilla extract
- 1 ½ baking soda
- 250ml milk
- 125ml vegetable oil
- 2 tsp vanilla extract
- 2 eggs
- 250ml boiling water
For Chocolate Icing
- 200ml double cream
- 200gms plain chocolate
Method Of Preparation
- Preheat oven to 160C/180C Gas/Fan. Grease and line two 18 inch sandwich tins.
- Add all the ingredients for the cake, except water, to the large bowl. Use an electric whisk or wooden spoon to beat the batter until smooth and thoroughly mixed.
- Add boiling water to the batter, little at a time.
- Divide the batter and fill up two sandwich tins and bake for 25-35 mins in the oven until firm. Check if an inserted toothpick comes out clean.
- Remove tins from oven and let them cool completely.
- Heat chocolate and cream together in a pan on low flame until chocolate melts. Remove from heat and whisk until smooth, thick and glossy. Set aside and let cool for 1-2 hours.
- Run a greased knife along the inside edges of the sandwich tins. Gently remove the cakes from the tin.
- Spread the chocolate icing on top of the cakes with help of the spatula. Transfer to the serving platter. Cover thoroughly with chocolate icing before serving.
Chocolate Cake Fudge

Cooking Time: 45mins

Ingredients
For Cake
- 1 1/2 cups white granulated sugar
- 1 1/2 cups all-purpose /plain flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tablespoon pure vanilla extract
- 3/4 cup boiling water mixed with 2 teaspoons instant coffee powder.
Chocolate Ganache
- 250 grams semi-sweet / dark chocolate chips
- 1 cup heavy cream / thickened cream
Method Of Preparation
Chocolate cake
- Combine sugar, flour, cocoa powder, salt, baking powder in a bowl and whisk well.
- Add vanilla, egg, oil, and milk to the flour mixture and beat to combine. Pour boiling water (with instant coffee) and stir until glossy.
- Pour the mixture into the pan and bake for 40-45mins or until an inserted toothpick comes out semi-clean.
- Remove from oven and let the cake cool. Shift the cake on a wire rack and allow to cool completely.
Chocolate Ganache
- Pour Cream in saucepan and heat on low flame for few minutes. Take the saucepan off the stove when the cream is heated.
- Add choco chips and cover with a lid. Let it sit for 5 mins.
