Strawberry Cupcake Ingredients

To prepare this moist and fluffy strawberry cupcake recipe, you’ll need:

Cake flour
Baking powder and baking soda
Salt
Butter
Granulated sugar
Eggs
Buttermilk
Vanilla extract
Fresh strawberries
Red food colouring (optional)

Method:


Preheat oven to 350 degrees F.
Sift cake flour into a bowl, then add the baking powder, baking soda and salt.
Whip butter and sugar until pale and fluffy. Then mix in the egg and egg whites.
Whisk together the buttermilk, part of the strawberry puree and vanilla extract.
Add the flour mixture and buttermilk mixture to the butter mixture in cut fold method.
Fold the diced strawberries into the batter. Divide it amongst the lined muffin cups and bake until toothpick inserted into the centre comes out clean. Allow the cupcakes to fully cool before frosting and decorating.

Ingredients for vanilla cream frosting :
3 cups powdered sugar
1/3 cup butter, softened
1 ½ teaspoons vanilla paste or (vanilla essence 4-6 drops)
1 to 2 tablespoons milk
Chocolate chips

Method:


In medium bowl, mix powdered sugar and butter with electric mixer on low speed. Stir in vanilla essence and 1 tablespoon of the milk. Gradually beat in so that remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar little at a time. Add in chocolate chips in moderation.

Tips:


If you can find a vanilla bean paste it’s worth the investment or you can carry on with vanilla essence The role of vanilla is that it enhances the sweetness of the sugar, thus allows you to decrease the amount of sugar in recipes.
You can even use unsalted butter.
For the final touches take the cupcakes and spread the vanilla frosting with a butter knife or a sandwich spreader.
For fancy decoration put the frosting into a piping bag and put on your favorite designed nozzle and pipe it along with the cupcake.
