Coming up with the right snack for your kids is a very strenuous task. Healthy snacks are not tasty and tasty snacks are not healthy. But now you don’t have to worry more. We have come up with yummy as well as healthy banana cake recipe to make your child happy and healthy at the same time.

Banana Bread Icecream Cake

Ingredients

  • ½ cup sugar (100 g)
  • 1 teaspoon vanilla
  • 3 bananas
  • 1 egg
  • ¼ cup butter, melted (60 g)
  • 1 pinch salt
  • 1 teaspoon baking soda
  • 2 cups of softened vanilla ice cream, (290 g)
  •  1 ½ cups flour (190 g)
  • 2 cups chocolate ice cream (290 g)

Method Of Preparation

  1. Preheat oven at 180ºC/ 350ºF
  2. Mash bananas in the bowl with help of a fork.
  3. Add egg, melted butter, vanilla, sugar, and mix thoroughly.
  4. Add baking soda, salt, flour, and mix and combine well.
  5. Pour the mixture in baking pan.
  6. Bake for 40-50mins or until an inserted toothpick comes out clean.
  7. Let it cool. Once at room temperature, take the bread out from the pan and slice width-wise into 3 horizontal layers.
  8. Line the baking pan with wrap and place last layer/bottom layer of banana bread into the pan.
  9.  Top it with softened vanilla ice-cream. Spread neatly with the spatula or spoon.
  10. Top the layer of ice-cream with a middle layer of banana bread.
  11. Take softened chocolate ice cream and top the middle layer with it. Spread evenly.
  12. Place the remaining slice of banana bread on the top. Cover it with plastic wrap.
  13. Freeze for at least an hour or refrigerate overnight.
  14. Serve and enjoy.

Banana Cake With Cream Cheese Frosting

Ingredients

For cake

  • 2 teaspoon vanilla
  • ¾ cup butter, melted (60 g)
  • 1 pinch salt
  • 1 ½   teaspoon baking soda
  • 3 eggs
  •  1 ½ cups flour (190 g)
  • 2 teaspoons lemon juice
  •  1 12cups  banana, mashed, ripe
  • 2  1/8  cup sugar (100 g)

For Frosting

  • 3 ½ cup icing sugar
  • 1 teaspoon vanilla
  • 1 (8 ounces) package of softened cream cheese
  • ½ cup softened butter

Method Of Preparation

  1. Preheat oven to 135ºC
  2. Grease a 9 X 13 pan
  3. Mix mashed banana with lemon juice, keep aside
  4. Mix baking soda, flour, and salt keep aside
  5. Beat butter and sugar until fluffy
  6. Add eggs and beat, one at a time and stir in vanilla
  7. Beat flour mixture while adding buttermilk
  8. Add the banana mixture and stir
  9. Pour batter in the lined pan and bake for an hour
  10. Cream the cream cheese and butter until smooth
  11. Add 1 tsp vanilla and beat well.
  12.  Next, add icing sugar. Beat slowly until thoroughly combined. Beat vigorously until smooth.
  13. Spread evenly on a cooled cake
  14. Chop walnuts and garnish the cake with them.
  15. Serve and enjoy.
