Ingredients For Classic Birthday Cake

Cake

  • 2 cups Unbleached All-Purpose Flour
  • Four large eggs, at room temperature
  • 1 1/4 teaspoons salt
  • 1 cup milk (whole milk preferred)
  • Two teaspoons baking powder
  • 1/3 cup vegetable oil
  • One tablespoon vanilla extract
  • 2 cups granulated sugar
  • 1/4 cup butter, cut into pats
  • 1/8 teaspoon almond extract, optional

Frosting

  • 1 1/4 cups natural cocoa powder
  • 4 cups confectioners’ sugar (approx. 454g), divided
  • 1/4 teaspoon salt
  • 1/3 cup hot water
  • 227g butter softened
  • One tablespoon vanilla extract

Instructions To Make Classic Birthday Cake

  1. First of all, preheat the oven to 325 degrees F having a rack in the middle. Lightly grease two round cake pans having the dimension of 8″ x 2″. Moreover, you can line the bottom using a parchment sheet to give extra protection from sticking.
  2. Combine the salt, flour, and baking powder in a small bowl. Keep it aside.
  3. Beat the sugar, vanilla, eggs, almond extract using stand mixer at medium-high speed. Stop when you get a thick batter having a light golden color. It must fall in thick ribbons from the beater.
  4. Mix the ingredients of the small bowl in the mixture by hand or mixer. Scrape the sides as well as bottom to incorporate any remaining flour.
  5. Bring the milk to simmer in a saucepan. Remove it from heat and then add oil and butter. Resume the stirring until the whole butter melts.
  6. Pour the milk-butter mixture into the batter. Stir on low speed of mixer until the mixture gets smooth.

  1. Combine the cocoa powder, salt, and one cup of confectioners’ sugar in the mixing bowl. Stir it and then add water and vanilla.
  2. Now, add the remaining sugar as well as cake. Stir well to combine and beat for 1 to 2 minutes using the mixer. When you get the light color and fluffy batter, scrape the sides of the bowl. You can add one teaspoon water if the mixture seems too stiff.

To Assemble The Cake

  1. Take a serving plate and place one later of cake on it. Use parchment paper below the cake to keep the dish clean. Make a half-inch layer over this layer of frosting. Spread the frosting on the bottom side of the other cake layer. Press both the frosted layers to set.
