Ingredients

  • Flour – 3 cups
  • White sugar – 2 cups
  • Butter – 1 cup, softened
  • Sweet potato – 2 cups, cooked and mashed
  • Baking soda and nutmeg powder – ½ tsp each
  • Baking powder -2 Tsp
  • Eggs – 4
  • Vanilla extract and cinnamon powder – 1 tsp each
  • Orange zest – 2 tsp
  • Orange juice – 5 Tsp
  • Confectioner’s sugar – 1 cup
  • Salt – 1 pinch

Directions

  • Preheat the oven at 350 degrees Fahrenheit.
  • Take 10-inch tube pan, grease it and dust some flour over it.
  • In a bowl, mix flour, nutmeg and cinnamon powder, baking soda and baking powder. Keep it to use later.
  • Take an electric mixer and mix the butter with sugar in a big bowl. Beat till they are fluffy. Add the mashed potato, vanilla extract, and eggs into it and mix them very well. Do not break all the eggs at a time. Pour them one by one and keep stirring.
  • Now pour the cake batter into the tube pan and put it inside the oven.
  • Bake for about 1 hour 20 minutes.
  • Take it out and keep it for half an hour to cool it.
  • Now prepare the glaze. Blend the confectioner’s sugar with the orange juice and tip this mixture on the warm cake. Sprinkle the orange zest.
  • Your cake is ready. Now you can slice it to eat, or you can pack it in an air-tight box if you want to take it anywhere.

Lemon Pound Cake With Vanilla Extract And Sour Cream

This cake is the perfect companion of hot beverages like coffee or tea. Have it in the evening or in the morning, as you like.

Preparation time – 15 minutes

Cooking time – 45 minutes

Ingredients

  • Flour – 3 cups
  • Baking powder – 2 Tsp
  • Milk – 1 cup
  • Sugar -2 cups
  • Sour cream – ½ cup
  • Vanilla extract and lemon extract – 1 ¼ tsp each
  • Eggs – 3
  • Nutmeg – ¼ Tsp
  • Salt – a pinch
  • Shortening, butter flavored – 1 cup

Directions

  • Preheat the oven at 350 degrees Fahrenheit. Take 10-inch tube pan and grease it adequately followed by dusting with flour.
  • Add flour, nutmeg, baking powder and salt in a bowl and mix them thoroughly. Keep this mixture aside.
  • Take a large bowl and mix the sugar with the shortening. Add eggs one by one, vanilla extract, sour cream, and lemon cream. Whisk all the ingredients together with an electric mixer until they become fluffy.
  • Now add the flour mixture and milk and mix again.
  • Tip this cake batter into the tube pan and put it inside the oven for baking.
  • After about 45 minutes, take the pan out. Keep the cake aside for a few hours to cool down.
  • When it is cooled, slice it and serve with tea or coffee.
