American Sponge Cake

Light and spongy texture and a juicy and sweet aroma make this is a unique cake for any occasion. The people on a diet can have it without a guilty pang as it is devoid of solid fats. So, let’s start with the recipe.

Ingredients

  • Sifted flour- 100 gm
  • Eggs – 6
  • Salt and baking powder – 1/4 tsp each
  • Vanilla extract – 1 tsp
  • White granulated sugar – 200 gm
  • Water – 2 tbsp
  • Cream of tartar – ¾ tbsp
  • Lemon or orange zest – As you like

For Serving

Whipped cream or icing sugar – as you prefer

Directions

  • Preheat the oven at 350 degrees Fahrenheit. Keep the rack in the center.
  • Take 2-piece tube pan of 10 inches. Do not grease it.
  • Mix baking powder with salt and flour in a bowl.
  • Take 2 bowls. Separate the egg whites and egg yolks.
  • Add 2/3 cup of sugar in the bowl of egg yolks. Start beating them using a mixer and continue to do so till they become thick and fluffy and pale in color. Now add the vanilla extract, lemon zest, and water.
  • Start beating the egg whites now. As it becomes foamy, add the cream of tartar and beat again till a foam peak is formed. Slowly add ¼ cup of sugar and beat again.
  • Now pour the flour mixture in the egg yolk bowl and mix with a rubber spatula quickly but softly. Add the egg whites now and give it a mix but refrain from overdoing.
  • The cake batter is ready. Tip it into the tube pan and bake it in the oven for about 30 minutes. Put in a toothpick to see whether it is done or not. If it comes out clean, then your cake is ready.
  • Take it out and let it cool. If you like, you can have it plain.
  • For some extra kick, you can add fresh fruits or whipped cream or icing sugar on it before having a bite or serving to the guests.

Tea Time Sponge Cake

Preparation time- 30 minutes

Cooking time – 20 minutes

Ingredients

  • Flour – 1 cup
  • Butter – 1 cup, softened
  • Confectioner’s sugar – 1 cup
  • Eggs – 2
  • Milk – ½ cup
  • Baking powder – 1 ½ tsp
  • Vanilla extract – 1 tsp

Directions

  • Take an 8-inch springform pan and grease it. Preheat the oven at 400 degree Fahrenheit.
  • Mix the flour with baking powder in a bowl and keep it aside.
  • Now take the butter and sugar in a bowl and start beating with an electric mixer. When the mixture becomes fluffy, add the eggs one by one and keep beating. Add the vanilla extract, flour mixture along with the milk and mix again so that every ingredient is combined well.
  • Tip the batter into the greased cake pan. Put it in the oven and bake it for at least 20 minutes. Put in a toothpick in the center of the cake to see whether it is coming out clean or not. If it’s clean, then your cake is ready.
  • Let it cool for some time. Sprinkle confectioner’s sugar on the top and serve it.
